It's HALKIDIKI. Beautiful place, got married there. You are, of course correct, Jules. My apologies. I was still basking in the afterglow of seven of the plump little buggers, and my typing got sloppy, or it might have been the balaclava Baklava I'd allowed myself.

I'm not usually that pedantic but thought in this case I would allow myself a little indulgence ... I'm also not much of an olive eater but there are so many other culinary treats when we visit Greece, one is spoilt for choice of course. I really shouldn't be thinking about it on diet day ...

I've just had the most delicious sausages I've tasted since I don't know when. The Jolly Hog The Porky Black Sausages to be precise, and they get their name from the fact that they are flavoured with little bits of Black Pudding & Apple. They're not too spicy, not too peppery, and have just a hint of sweetness courtesy of the apple. And they're gluten free. I like Jolly Hog's sausages, and I usually buy either their Caramelised Onion sausages, but these have eclipsed even them. I had a Sainsbury's TTD Burger with West Country Cheddar to go with them, and bunged them all in the Cuisinart Griddle while my Sainsbury's Crispy Potato Slices cooked in the oven. It was luvverly, and relatively healthy as no fat was used, and in fact any excess fat was drained away from the meat by the griddle.

Ruth has just cooked up one of our favourites, chicken in honey, lemon juice and chilli flakes. Yummy and with a lovely thick residue sauce. Nice with just salad.

I bought a small pack of these, just to try. I've just ordered a 1kg sack as the small one seems to have evaporated. amazon.co.uk/gp/product/B07YX8J81J/I had a brainwave too (OK, more like a tidal wave,) and bought a half-kilo sack of raw Pistachios to see how they'll roast up in the air fryer.

That looks yum - and sticky! It's a bit sticky, but not as sticky as it looks. There are also "rocks" of the coating amongst the nuts, which reminded me of "proper" hard toffee.

Been doing lots of cooking recently. Making a healthy effort recently and highlights have been Bombay potatoes, caribbean pasties, quiche, veg and smoked haddock bake,Tuscan bean soup and chicken casserole.
I also made my own smoker recently so I've been using that a fair bit with varying degrees of success....

Thinly sliced Charlotte potatoes, chopped red onion, sweetcorn, peas, cubetti de pancetta, all cooked off in my omelette pan, and then I dumped three beaten Burford brown eggs on top and let the whole thing firm up. Looked awful, tasted beautiful, especially with the addition of a large dollop of Heinz's finest tomato ketchup. I can feel my arteries hardening as I type. Pancakes, with lemon juice, honey, and Demerara sugar later, and I don't care.

I like the look of that. I've bookmarked both recipes, so thanks. Secret is the thickness of the strips of beef and the time the beef is tendering in the cornflour and chilli flakes it’s very rich and tasty,I can guarantee you will make it again or make a bit extra for seconds.
