Merry Christmas guys and happy holidays. Wow last Christmas here with the family. There are only 4 of us each year. We immigrated from Poland in 1983 and then a year later my sister was born here.
In a few months my parents will move to South Carolina so this is the last one for all of us together here.
Mom makes a polish styled Greek sauce for fish plates each year and it is stellar. Not sure if I'm misremebering but I believe her annual fish dinner with Greek sauce was mentioned in the Hitch-Hikers Guide To The Galaxy by Douglas Adams. It's that good.

It's a lot of cooked diced carrots and think some onion and it ends up having a bit of a kick to it like slightly spicy. Please google it. It is borderline inappropriate table fodder.
I've taken it to work after Christmas more than once to have people try it.

POLISH GREEK STYLE FISH1 pound of carrots, about 5 medium 1 parsnip 2 celery ribs 3 cups water, salted or stock 6 whole allspice berries 1 bay leaf 2 pounds of white fish, cod, hake, pollock, tilapia, walleye, perch, etc. fresh or frozen, thawed salt & pepper 1/2 cup flour 4 tablespoons oil for frying, divided 1 large onion, diced 1 small leek, the white parts only, sliced 1/4 cup tomato paste 1/2 teaspoon black pepper 1/2 teaspoon sweet paprika 1/2 teaspoon dried basil 1/2 teaspoon dried oregano flat-leaf parsley for garnish

Intriguing - I'm not sure which bits are Polish and which bits are Greek but not to worry - Robert you must bring some over with you when you visit the UK!

Yes I will prepare it when I visit the UK, Jules. I will begin practicing this coming week to have a half decent grasp of it by then.

I bought a " prepared" turkey joint, with smoked bacon on top and a layer of stuffing. I cooked that this afternoon and will slice it tomorrow, serve up what I need (I'll reheat it in gravy first) and probably cook extra veg and plate up a couple of dinners ready to be microwaved on boxing day, and a.n. other day. Then it's onto a selection of cheeses and cooked ham with coleslaw, potato salad, and some nice Moroccan cous cous for the rest of the week. The cheeses are as follows... Ossau Iraty Caprice des Dieux Shropshire Red Beacon Fell Creamy Lancashire Welsh Slate Cavern Aged Cheddar Barber's Truffle Cheddar Chaource Manchego Doux De Montagne and Comté I've also got Paysan Breton French Sea Salt Cream Cheese to go with smoked salmon bagels for lunches while it lasts. I've also got four different Christmas Puds with custard and fresh cream for the week's puddings.

We have a Greek recipe for lunch / dinner tomorrow which is basically chicken stuffed with mincemeat,rice and raisins. It's absolutely delicious and instantaneously takes me back to Greece. Funny how food can be so evocative...

Right, dinner has been cooked and eaten, including the obligatory oven-burn to my left hand. Dr. Who has been watched. An absolutely gobsmacking dessert has been partaken of. Aaaaaaaaaand ...scene! The nicest surprise today was Paul McCartney's book, "The Lyrics (1956 to the present)," from the Sister-in-law & family. Normally she buys me a really " worthy" book about somebody I've never heard of who did great self-sacrificing things, and who was, preferably, suffering from some incurable disease or other throughout. I'll actually read this one. That's that over with then. All back to normal now, and it's only 365 days until Christmas. Mind how you go.

Not sure if this is blasphemous to do this but since I've started baking potatoes instead of boiling them, as I've always done, I'd love to find things to sprinkle on top of them (seasoned ground beef and shredded cheese). Would be a holiday fun time if I sprinkled one of those cheeses on a baked potato currently in the oven.
Just a quick 500 word essay on mom's polish Greek styled fish last night. 11/10 this one was as good as any that I can remember. Something happens when it all sort Of melts together and the fish Marinates a while in this sauce. It's obscene. In the future this dish will be illegal.
Had 2 types of polish fried perogies, the ones stuffed with black pepper sauerkraut mix of some kind and cheese/potato/onion stuffed ones. All of it was just magical.

Chilli Con Carne goes great on top of a baked potato, especially with a bit of grated cheese on top of it. Tuna Mayonnaise is another good topper. I shall start on the cheeses probably Wednesday, or, more likely, Thursday. I've got at least two days worth of Turkey left to eat first.

I've got my holiday night time drive to attend to to kill time and listen to podcasts before arriving at the movie theater to see either Ferrari or Godzilla Minus One. Then home for a drink. Will do food shopping tomorrow will look into those baked potato topping recommendations, thanks Paul.
Then with a little bit of luck I'll indeed be trekking up to Vermont or Maine for a full afternoon and night of snowboarding and then will sleep at parents house for the first time in almost a decade.
I will have the nerve this holiday to dream and wish for a bit of holiday magic just to try to forget the real world for a while.
