I try to eat vegetarian once or twice a week. It's not due to any sort of health kick though, it's just that living on my own I need to stretch my imagination beyond its comfort zone when planning my week's meals. I'm worried that it would be all too easy to get lazy and exist on unhealthy ready-meals etc.

I'd go for it if I was somewhere with dodgy meat - some of these Johnny Foreigner type places - and just go veggie while I was there. Long term though,no. I like steaks too much!

The big surprise for me was the 25% veggie meals.
3% of the UK population is veggie. Vegan way less

I find that I select the veggie option at work three out of four times. I just prefer the selections.

My dad had a stroke so everyone in my family have become very health conscious. I incorporate a lot of vegetables in my meals. And lots of lemon in my tea everyday.
One thing I've learned is that veggie meat, those imitation ground beef crumbles, make Shepards pie taste way better. It's a real treat that way I eat it a few times per week.

We were both vegetarian for over 10 years, but then we got two rescue dogs. The amount of meat they were putting away kinda made it seem less important for us to abstain. The dogs are long passed, but we still haven't got on the veggie train again. The day will come though.

We have Quorn here in the UK, not sure if it's available over there. It does produce tasty meals and is available minced, cubed and as steaks.

We regularly make Chilli Con Carne with Quorn and it is really quite lovely, I honestly can barely taste the difference between the meat version.

Made a beautiful roasted aubergine and chick peas curry last night. That was actually a vegan dish but we're not vegans.

If I go out to a do with food on offer I have to grab the veggie option quick - as the carnies take the veggie option Perhaps the caterers think they have to try harder

After our first two dogs arrived I worked out I wouldn't eat them so I'd stop eating animals. Few years later I found veggie dog food. Told them what was going on but they were too busy eating Our dogs live a long time and hopefully at least part of that is the veggie food. Currently they have V-Dog. Have also had Wafcol and Ami, possibly others

I cook a mixture of everything, rather than say just a vegetarian meal. So I would put at least shrimps or prawns in the vegetables. Then there is seafood day on Friday, every Friday. And with Lent coming up, there will be no red or white meat on the table till Easter.

The big surprise for me was the 25% veggie meals.... Not too much of a surprise though surely. Using the Vegetarian Sociey's definition of vegetarian, it's perfectly OK to have beans-on-toast, pizza, cauliflower cheese and all sorts of other 'snack' foods of the type that many people live on.

Beans on toast is good for you I'm told. (Not over keen, perhaps I ought to be)
Not a lot for a "meal" though

I looked it up says it is availed in 19 countries and came to north America in 2002. Ill try to find it, cant hurt to try it.

I was going to try Tofu in a spicy Tawa I usually make with chicken. Then I looked it up; Tofu's as bad for you as some of the meat I was trying to cut back on. It's associated with breast cancer and thyroid problems, both of which my wife had/has issues with. There's no free lunch is there? Maybe I'll try Quorn.
