Peru is often my second choice after Columbia Mine, too. Columbia Quinchia and Peru Macchu Picchu are my two favourites that I keep returning to.

Vietnamese is a massive branch. So weird it's not true compared to trad coffee. TBH I am not sure it really is coffee it is so far from what we are used to in the UK. Would the goats jump around after eating the beans off the plants?

Tried and tested. Definitely vile. The first thing the hotel tried to shove down my throat at breakfast time. The fact is in Hanoi at least it's not really what the coffee shops are selling as the main goto. The reality is they are selling all sorts of coffee variations. What I am saying is I think tradition is being surpassed by variation.

I've made a little tweak to my daily Aeropress routine which is paying great dividends.
I use an inverted version of the Hoffman recipe which calls for 11g of coffee and 200ml of water. Previously I had not been paying attention to how much coffee I had in my scoop but now I'm weighing each dose. I now get a superior balance of flavour, seemingly better extracted from the lower dose of coffee. It's definitely brighter, with more nuances in the taste. Excellent. The Aeropress metal filter continues to give great service and will stay with me.

I think weighing your dose is essential to achieving consistency, especially when you have a coffee dialed in to how much you like. It's nerdy to most folk I know, but I'd rather get a good coffee every-time than worry about being thought of as a nerd . . . that ship sailed long ago anyway!

In my case consistently reducing the dose has resulted in more flavour so it's a no-brainer. My current ratio is 14g for a standard 330ml mug.
One thing I did notice when going from my Wilfa grinder to the Niche, is I had to drop the bean to water ratio as the brews were much stronger with that same beans. Only thing that changed was the grinder, but the flavour was quite different for the same amount of coffee.
