I will finish this story by saying this morning's cup was absolutely exquisite, the best I have made. Smooth, buttery and full bodied without a hint of bitterness...
Just goes to show what can be done by paying attention to the details, crucially with the water at correct temperature.

I'm just enjoying a coffee made from a fresh packet of Columbian Quinchia, metal filter and done in the conventional way in my Aeropress, leaving the water to rest 60s after boiling, pouring, stirring and leaving for 45s to brew. Delicious!

Fika is a huge thing! No doubt it contributes to the high rate of type 2 and heart problems Scandi and Nordic countries have 😂 Used to be a great way to catch up with colleagues in a relaxed environment. Basic fika is daily. Fredags fika, (Friday fika) was a huge thing. Whole Ericsson had downtime at 3pm! Each section would group, a rota of who should bring home baked things in, or buy in (if not capable of baking themselves). I never liked Swedish filter coffee. Pretty grim stuff made like that. Strong and black and they all had coffee related stomach problems by the age of 40! I remember when travelling to the USA the Swedes stationed there would use double or triple filters and 3 to 4 times more yank coffee up try to get the strength up. Bringing coffee over to them was more important than booze or even Pepparkakor! Then Ikea Sweden shop happened across the globe.. Stuffing Swedish coffee through a pressure basket / Espresso machine improves it, but better off with proper espresso coffee..

The baked things sound lovely but the coffee lousy!
Still, I like the social side of it, a really nice tradition...

Last week Sainsburys ran out of Quinchia so I thought I'd try their winter mix. Big mistake - just don't! Awful, irredeemable coffee, quite disgusting. I had to throw it out.
Back to Quinchia - ahh, that's better!

I came across this - it's 2 years old. I searched this place and nothing came up, so...
It's beautiful. Very clever engineering / fluid mechanics physics, and design. Nicely made and I guess affordable for some.
I couldn't live with the, for me, very long time to produce 1 espresso or the lack of espresso machine milk(s) stream wand.
I wonder how fast it eats those sealing 'O' rings.? Tempting to smear a tiny bit of plumbers silicone grease on them 😂

Yes I came across that some time ago, started to want one based purely on design and looks, then thought in the immortal words of Mr Catchphrase, Roy Walker, "It's good but its not right" ...

I watched his Flair 58 review. Again not the sort of machine I'd go for, unless there's a good separate streaming wand solution available.
Apart from the elec heater add on, I do like the manual nature of it though. Bit hair shirt but not like the the 9Barista engineering marvel one!
Anyway, they use a puck top gauze disc to help distribute the water more evenly. James imagined that it was the sort of thing that any Espresso machine with a trad group head etc could use to good benefit..!
Any one tried such on a regular 9 bar pump machine?
It does need a regular clean in coffee machine cleaner solution though, or they gum up..

James makes some interesting statements in his Decent review. As a programmer (amongst other software related development activities) for more than four decades, I have been curious about that highly programmable machine since it first came out. I re-watched it a couple of days ago.
The shocker for me is he says he doesn't own a coffee making machine and nor does he want to. He doesn't make it every day and when he does, it is only espresso. He doesn't like milk.
Surprising.

Perhaps he's lactose intolerant? Or needs to taste raw to really evaluate, a coffee taster never relaxes fully😂 Why own a machine if you can have a continual stream of new machines to test and review, and it's your day job.. Also prob has barista coffee on his doorstep. Someone else making a great cup must be nice🙂

I'm a total convert to using a cloth filter with the Aeropress but you have to boil it in clean water for around 10 mins every couple of weeks to get rid of residual oils. You then get a really clean tasting cup again.

Remember to use inverted Aeropress method with it Mike or else you will find it will let too much coffee drip through prematurely.

Er, that's a needlessly complicated inverted recipe!
I'm doing the James Hoffman recipe but simply inverted. Same timings etc

A crucial discovery in the use of the Inverted Method has been discovered in Highgate Mansions.
After putting your coffee into the Aeropress DO NOT be tempted to shake it to level the grounds under any circumstances. This has the effect of tamping the coffee and making it more difficult for your water to run through it - the effect of this is you will be struggling to pour a full 200g of water on it or if you do it will be right to the brim of the chamber. I thought something was wrong with my digital scales until my theory clicked.
