julesd68 I've returned to using the Cafe Concetto superfine metal filter you kindly sent me some years ago. The coffee definitely tastes better than when using paper filters. Also, Sainsbury's Columbian Quinchia is back in stock and I received my airtight coffee container from eBay.

I must try using a metal or other filter again - as much as anything from an environmental perspective it doesn't make sense to me to be using paper filters if a decent alternative is available.

New (manual) ceramic burr grinder arriving today, along with some of these... ...and then I can finally get around to trying out the cold brew coffee maker I bought. I thought the beans looked " interesting".

The beans etc. have arrived. They were roasted on 23/05/22 - not sure how that compares with the experience(s) you guys have had.
They smell incredibly rich and rather gorgeous. Ist grind with new grinder completed and I'm waiting for my water to filter - like a dozy bugger I forgot to start with that - and then it's on to the mysteries of Cold Brew Coffee science.
Smoke me a kipper, chaps, I'll be back for breakfast.

The hand ones can be excellent but are slow and do take effort.
I got a Mignon Eureka Specialita with the largest burrs.
During the 10sec grind time I'm fetching milk getting cups ready etc.
It changed the level up taste wise from the hand grinder I had too.

I only have an electric 'liquidiser-style' grinder which is a pain as you can't control the fineness with any accuracy. I gave up on it a long time ago.

Cold brewing is the future. My future anyway. Obviously, it's not for them as likes sketching little hearts or smiley faces in their crema, but if you prefer your coffee unadulterated I would definitely urge you to give it a go. Apart from a cheap brewing jug like the one I bought you've already got everything else you need. This is smooth, silky, and delicious, without a single hint of acidity. Tomorrow I shall try microwaving a mugful at lunchtime to see how it stands up when heated. Apparently one is supposed to dilute it. Maybe I just made it a bit weak, but it's perfect for me, and I do like my coffee strong.

THe cold brew heated up was a bit of a disappointment, but fixable I think. Hot, for some reason, it tasted weaker somehow. I need to brew the next batch stronger, and a couple of sweeteners, or a spoonful of Demerera wouldn't go amiss. Generally, I like sweet coffee, but I enjoyed the cold stuff without last night. Heating it seems to change the character somehow. More experimentation definitely called for. I still think its the way forward for me though.

No, zero milk/cream/creamer/etc., which is why I recommended it for people who prefer their coffee " unadulterated" when mentioning the lack of crema three posts ago. Cold brewing is the future. I had a long glass with dinner, and chilled is definitely better for this batch. The next one will be stronger. Those beans are delicious by the way, and very rich. The aroma of the beans when I opened the bag was mind-blowing.

Roasted some more green beans today. I read up some more and roasted slowly with constant agitation. After the first crack or pop, roasting for another 5 minutes until I got a nice colour. Don't want too dark! Cooled and de-chaffed / initial cooling down in two metal sieves. Left to cool fully and then into an airtight glass container. Not much coffee smell at first but as the process completes in the sealed jar over 24hrs, the aroma develops massively! Amazing coffee aroma now already. Looking forward to cup tomorrow.. Here they are just after roasting. They are getting more even in colour now. Just as the article said they would.
