Watched some YT clips
They are telling me things I don't currently understand
The idea is for me to use the phone for more things and I will find them as I go along.
Can I install and get a default vanilla version ?

By default vanilla version, do you mean what Launcher came with the phone? It's going to vary with brand.
If you go to Settings / Apps / Default apps the 'Home app' is your current Launcher. For example, my Oppo phone has Microsoft Launcher while my S7 FE tablet has One UI Home (the one Samsung provide).
You can try a few and settle on the one you like. This then gives your phone a personality that suits your style of working.
