I have heard the odd part of a track on a TV show and have quite liked what I’ve heard, so thought I’d ask if any of you can recommend anything. There seems to be such a vast amount and I don’t know what to look for even via Spotify.
I’m talking abut proper Indian music, not things like Nitin Sawhney or equivalent.

Try a search for Nusrat Fateh Ali Khan for starters. You could also try a more general search for Bhangra.

I am better with more modern players U Srinivas music is pretty amazing and will certainly take you on a journey VM Bhatt is a good Indian guitarist that does amazing bends and slides to create his music Dr L Subramanian is a really good violinist some of his music is more modern

Believe it or not, back in the mid-eighties I was actually invited, by a mate, to become the (and I quote) " token honkey guitarist" in an Indian Band who were quite big on the local scene in London, and he'd actually my playing prior to making the offer. Sadly they all lived and mostly played around North London, otherwise it would have been a blast. He used to bung me tapes and videos occasionally, including one of Nusrat Fateh Ali Khan. I think he was sort of the "Pavarotti" of Indian singers.

Yes, @pjdowns maybe try exploring something by Nora Jones' dad! This is quite hypnotic - sold on the George Harrison connection. 'Chants of India' I'm not sure if this is the actual album called 'Ragas in a Minor Scale', which is good. ...and 'West Meets East' is a classic

Try a search for Nusrat Fateh Ali Khan for starters. You could also try a more general search for Bhangra. Thank you, quite like this, although sometimes overly acoustic in places for me.
